To begin, heat 1 tbsp oil in a pan. Add in a bay leaf and the cumin seeds and allow them to crackle.
Next, add in the chopped garlic along with the chopped green chillies. Cook for a minute. Do not brown the garlic.
Add in the boiled rice that is seasoned with salt. Mix gently. Cook for a few minutes until the rice heats up.
Turn off the heat. Add in the chopped coriander leaves and the lemon juice. Mix well. Check the salt and add more if required.
Add in the red chilli flakes and vinegar. Mix.

The Cumin Coriander Rice is ready to serve. Garnish with chopped coriander leaves and lemon wedges.
