Steep the chamomile tea for 5 minutes in ½ cup hot water. Remove the tea bags and let it cool.
In the large bowl, mix together the dry ingredients - all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the wet ingredients - egg, milk, oil, lemon juice, lemon zest, and the brewed chamomile tea.
Now add wet ingredients to the dry ingredients. Mix just until moist and combined. Do not overmix. In the meantime, preheat the oven to 180°C or 375°F.
Grease the muffin moulds with oil. Pour in the batter 3/4 levels. Tap once to remove air bubbles. Bake at 180°C or 375°F for 20 minutes. The baking time varies based on the oven and the size of the muffin moulds.
Check with a toothpick if the muffins are done. It should come out clean. Move to a rack to cool.
