Apple Cabbage Slaw

Light and crisp, Apple Cabbage Slaw is a flavorful accompaniment to your meal. Not only is it quick and easy to whip up but also packed with nutrients and antioxidants.

Ingredients

  • 2 cups shredded green cabbage
  • 1 tsp salt or to taste
  • 1 apple diced
  • Juice of one lemon
  • 1 cup cucumber diced
  • 1/2 cup carrot juliennes
  • 1/4 cup chopped spring onion whites
  • 2 tbsp chopped green coriander leaves

For the dressing

  • 1/4 cup curd (or plain yogurt)
  • 2 tbsp mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 jalapeno finely chopped
  • 1/2 tsp cumin powder (jeera)
  • 1/2 tsp black pepper powder

Instructions

  • To begin, add a teaspoon of salt to the cabbage. Mix well, crush it gently, and allow to strain in a colander.
  • In the meantime, prepare the dressing. In a bowl, mix curd, mayonnaise, apple cider vinegar, jalapeno, cumin powder, and black pepper powder. Keep aside.
  • Drain the cabbage and place it in a bowl. Add in the diced apples and lemon juice. Mix well.
  • Add in cucumber and carrots. Mix.
  • Next, add in the dressing. Toss until well coated.
  • Finally, add the spring onions and coriander leaves. Toss well.
  • The Apple Cabbage Slaw is ready. Refrigerate for at least 30 minutes before serving for the flavors to blend.

Notes

  • Prepping the cabbage with salt enhances its flavors and prevents the dressing from turning watery.
  • Tossing diced apples in lemon juice before adding the other vegetables ensures that the apples do not oxidize and change color.
