Ingredients
1cabbage (approx. 300 gms)
1/2cupgreen peas
2tbspoil
1tspmustard seeds (sarson)
1tspcumin seeds (jeera)
1/4tsphing (asafoetida)
2chopped green chillies
1sprigcurry leaves
1tspsalt
1tbspfinely chopped coriander stems
1/2tspturmeric powder
1/2tspsugar
1tbsplemon juice
1tbspchopped green coriander leaves
Instructions
To begin, chop the cabbage and keep it aside.
Heat oil in a pan. Add in the mustard seeds and allow them to crackle.
Next add cumin seeds, asafoetida, chopped green chillies, and curry leaves. Mix well.
Add in the peas and chopped coriander stems. Saute for a minute or two.
Add the cabbage, salt, sugar, and turmeric powder. Mix well. Cover with a lid and cook until done, mixing occasionally.
Turn off the heat. Finish with lemon juice and chopped coriander leaves. Mix well.
The Kobichi Bhaji is ready to serve. Serve hot with chapatis.
Notes
You can use frozen peas for the recipe. Be sure to thaw them first.
