Ingredients
2full chicken legs (thigh and drumstick)
2tbspoil
1medium onion finely chopped
2green chillies finely chopped
Chat masala for garnish
Lemon slices for garnish
Marinade
3tbspcurd
2tbspginger garlic paste
2tspred chilli powder
1tbspcumin powder
1tbspcoriander powder
Salt to taste
Garam masala (coarsely ground)
5cloves
5peppercorns
1"piece of cinnamon
1star anise
1black cardamom
5green cardamoms
Instructions
Prepare the chicken by making gashes on the flesh so that mariande can soak in.
Now prepare the marinade by mixing the curd and the ginger garlic paste.
Add in red chilli powder, cumin powder, coriander powder, salt, and the coarsely ground garam masala. Mix well.
Add in the chicken legs and mix until they are well coated. Marinate for at least two hours, preferably overnight.
Before cooking, wipe off the marinade from the chicken. Do not throw away the marinade.
Heat the oil in a pan. Add in the finely chopped onions and green chillies. Saute. Just as it is about to change color, add in the chicken legs and sear them on high flame till they colorize.
Pour in the marinade with about half a cup of water. Cover it with a lid and put it on dum on low flame for 20 minutes.
Once the chicken is cooked, dry off the excess water.
Dum Chicken Leg Roast is ready to serve. Sprinkle on a bit of chat masala on top and serve with lemon wedges.
Notes
You can also use aluminum foil just beneath the lid for the dum
