Ingredients
500gmboneless chicken breast
2tbspsesame oil
Oil for deep frying
1/2cupall-purpose flour
1/2cupcornflour
1tspspring onion greens for garnish
1/2tspsesame seeds for garnish
Marinade
2tbsplight soy sauce
1tbspvinegar
1/2tspbaking soda
1egg
For the sauce
1cuporange juice
1tbspfinely chopped ginger
1tbspfinely chopped garlic
1tspred chilli flakes
3tbsplight soy sauce
2tbspvinegar
1tbsphoney
1 1/2tbspcornflour
Instructions
To begin, cut the boneless chicken breasts into small bite-sized pieces.
In a large bowl, marinate the chicken with light soy sauce, vinegar, baking soda, and an egg. Mix well and keep aside for at least 10 minutes.
Mix together the all-purpose flour and cornflour for dusting in a large bowl. Add in the marinated chicken and mix until the pieces are well coated. Dust off the extra flour.
Heat oil for deep frying. Fry the chicken pieces on low heat until cooked. Make sure they do not brown.
To prepare the sauce - mix the orange juice, vinegar, light soy sauce, honey, and chilli flakes in a large bowl.
Heat 2 tbsp of sesame oil in a pan. Add the finely chopped ginger and garlic and saute until translucent. Do not brown.
Add in the sauce mix and boil it for 2-3 minutes.
Make a slurry of 1 ½ tbsp cornflour with 3 tbsp of water. Add it to the sauce and cook until it thickens.
Add in the fried chicken pieces and mix until well coated. Add a bit of water as required if you find the consistency too thick.
The Orange Chicken is ready to serve. Garnish with chopped spring onion greens and sesame seeds.
