250-300gmsboneless chicken breast
Oil for deep frying
Marinade
2tbspginger garlic paste
1tbspcurd
2tbspapple cider vinegar/white vinegar
2tbspcumin powder (jeera)
2tbspcoriander powder (dhania)
1tspsalt or to taste
1tspKashmiri red chilli powder
2tspchilli sauce
1/2tspblack pepper powder
1egg
For dredging
3/4cupall-purpose flour
1/2cuprice flour
1/4cupcornflour
1tspsalt or to taste
1tspKashmiri red chilli powder
1/2tspbaking powder
Instructions
To begin, cut the boneless chicken breast into small bite-sized pieces.
Marinate with ginger garlic paste, curd, cumin powder, coriander powder, salt, Kashmiri red chilli powder, chilli sauce, black pepper powder, vinegar, and egg. Mix well and leave it to marinate for at least half an hour.
For dredging, in a large bowl, mix together all-purpose flour, rice flour, and cornflour. Season it with salt and Kashmiri red chilli. Add in the baking powder. Mix well.
Now transfer the marinated chicken pieces into the flour mixture. Mix until the pieces are well coated. Remove the pieces to a plate and dust off the excess flour.
Heat oil for deep frying. Fry the chicken pieces on medium heat until golden brown. For extra crispness, flash fry the pieces again before serving.
