Fresh and light. The Vegan Green Pea & Mint Soup is a refreshing one that is full of fiber. Try out my version of the classic English soup that can be served either hot or chilled.

Ingredients
2cupsgreen peas
1tbspolive oil
1medium onion chopped
1tbspchopped garlic
1bay leaf
1"piece of cinnamon
2cupsvegetable stock
3tbspchopped mint leaves
1tbspchopped green chillies
1tspvinegar
Salt to taste
Instructions
To begin, heat oil in a saucepan. Add in the bay leaf and the cinnamon stick.
Add in the chopped garlic and the chopped onions. Just as they turn translucent, add in the green peas. Cook for a minute.
Pour in the vegetable stock. Allow it to boil and then let it simmer until the peas soften. Turn off the heat and let it cool.
Drain the peas, onions, and garlic and save the liquid. Remove the bay leaf and the cinnamon stick. Add the mint leaves and green chillies to the mix and blend it into a smooth paste. You can use a bit of the liquid as required.
Return the blended mixture to the saucepan. Add in the liquid and bring to a boil. You can adjust the consistency as per your taste.
Add the vinegar. Check the salt and add more if required.
The Vegan Green Pea & Mint Soup is ready to serve. Garnish it with a sprig of mint and serve with toasted bread.
Notes
If you don’t have vegetable stock readily available, dissolve two cubes of Maggi Super Seasoning in 2 cups of water.
