Veg Manchow Soup

Ingredients

For the noodles

  • 1 cup boiled noodles
  • 2 tsp cornflour
  • Oil for deep frying

For the soup

  • 2 tbsp oil
  • 5-6 cloves of garlic finely chopped
  • 1" piece of ginger finely chopped
  • 2 green chillies finely chopped
  • 1/4 cup spring onions finely sliced
  • 1/4 cup carrots finely chopped
  • 1/4 cup beans finely chopped
  • 1/4 cup bell peppers finely chopped
  • 1/4 cup cabbage finely chopped
  • 4 cups vegetable stock
  • 1/2 tsp black pepper powder
  • 1/2 tsp sugar
  • 2 tbsp soy sauce
  • 1 tbsp chilli sauce
  • 1 tbsp vinegar
  • 2 tbsp cornflour for slurry
  • 2 tbsp coriander leaves finely chopped
  • Salt to taste

Instructions

  • To prepare the fried noodles, mix the cornflour with the boiled noodles until well coated.
  • Heat oil for deep frying. Fry the noodles until crisp. Remove and keep aside.
  • For the soup, heat 2 tbsp oil in a pan. Add in finely chopped garlic, ginger, and green chillies. Saute for a minute.
  • Add in the finely chopped vegetables and cook for another 2 minutes.
  • Now add in the vegetable stock. Next, add pepper powder and sugar. Mix and bring it to a boil.
  • Add in the soy sauce, chilli sauce, and vinegar. Boil for 2-3 minutes.
  • Make a slurry of 2 tbsp cornflour with 1/4 cup of water and add it to the soup. Boil the soup until it thickens stirring occasionally. Check the salt and add more if required.
  • Finally, add in chopped coriander leaves and mix.
  • The Manchow Soup is ready to serve. Just before serving, top it with fried noodles. Serve hot.
