To prepare the fried noodles, mix the cornflour with the boiled noodles until well coated.
Heat oil for deep frying. Fry the noodles until crisp. Remove and keep aside.
For the soup, heat 2 tbsp oil in a pan. Add in finely chopped garlic, ginger, and green chillies. Saute for a minute.
Add in the finely chopped vegetables and cook for another 2 minutes.
Now add in the vegetable stock. Next, add pepper powder and sugar. Mix and bring it to a boil.
Add in the soy sauce, chilli sauce, and vinegar. Boil for 2-3 minutes.
Make a slurry of 2 tbsp cornflour with 1/4 cup of water and add it to the soup. Boil the soup until it thickens stirring occasionally. Check the salt and add more if required.
Finally, add in chopped coriander leaves and mix.
The Manchow Soup is ready to serve. Just before serving, top it with fried noodles. Serve hot.
