To begin, prepare the topping. Heat 1 tbsp of oil in a pan. Add in the onions and saute for a few minutes. Add in the green chilies and saute until the onions are translucent.
Add the ginger garlic paste and cook for a minute or two.
Now add in the finely chopped tomatoes. Mix. Add the salt and saute until the tomatoes are cooked.
Add in the tomato puree and tomato sauce. Mix well.
Now add in the dry masalas - Kashmiri red chili powder, cumin powder (jeera), and coriander powder (dhania). Mix.
When oil begins to appear on the sides, add the vinegar and mix.
Finally add in the capsicum, paneer, and coriander leaves. Mix until the paneer is well-coated. Cook for a minute or two. Remove to a bowl and keep aside.
To prepare the parcels, roll out the bread slices. Spread butter evenly. Next spread the pasta sauce over the slice.
Place a spoonful or two of the paneer stuffing in a strip diagonally across. Top it with cheese.
Fold over the opposite sides and pin it down with a toothpick. Prepare the other parcels similarly. in the meantime, pre-heat the oven at 180°C or 350°F.
Brush some oil on top. Bake the parcels at 180°C or 350°F for 10-15 minutes until the cheese melts and the bread is crisp.
The Cheesy Paneer Bread Parcels are ready to serve.
