Cheesy Paneer Bread Parcels

Ingredients
For the topping
- 100 gms paneer (cottage cheese) cut into small pieces
- 1 tbsp vegetable oil
- 1 medium onion finely chopped
- 2 green chillies finely chopped
- 2 tsp ginger garlic paste
- 2 medium tomatoes finely chopped
- 1 tbsp tomato puree
- 1 tbsp tomato sauce
- 1 tsp salt
- 1/2 tsp Kashmiri red chilli powder
- 1 tsp cumin powder (jeera)
- 1 tsp coriander powder (dhania)
- 1 tsp vinegar
- 1 tbsp finely chopped green capsicum
- 1 tbsp chopped green coriander leaves
For the parcels
- 8 slices white bread
- 4 tbsp butter
- 4 tbsp pizza sauce
- 1/2 cup grated mozzarella cheese
Instructions
- To begin, prepare the topping. Heat 1 tbsp of oil in a pan. Add in the onions and saute for a few minutes. Add in the green chilies and saute until the onions are translucent.
- Add the ginger garlic paste and cook for a minute or two.
- Now add in the finely chopped tomatoes. Mix. Add the salt and saute until the tomatoes are cooked.
- Add in the tomato puree and tomato sauce. Mix well.
- Now add in the dry masalas – Kashmiri red chili powder, cumin powder (jeera), and coriander powder (dhania). Mix.
- When oil begins to appear on the sides, add the vinegar and mix.
- Finally add in the capsicum, paneer, and coriander leaves. Mix until the paneer is well-coated. Cook for a minute or two. Remove to a bowl and keep aside.
- To prepare the parcels, roll out the bread slices. Spread butter evenly. Next spread the pasta sauce over the slice.
- Place a spoonful or two of the paneer stuffing in a strip diagonally across. Top it with cheese.
- Fold over the opposite sides and pin it down with a toothpick. Prepare the other parcels similarly. in the meantime, pre-heat the oven at 180°C or 350°F.
- Brush some oil on top. Bake the parcels at 180°C or 350°F for 10-15 minutes until the cheese melts and the bread is crisp.
- The Cheesy Paneer Bread Parcels are ready to serve.
Notes
- You can replace the white bread with brown bread for a healthier version.
- The parcels can also be cooked on a stovetop. Cook covered on a tawa or a griddle on medium heat until the cheese melts and the bread is crisp.
