Chickpea Cheesy Veggie Melts

Looking for a fun and delicious way to get kids to enjoy more veggies? The Chickpea Cheesy Veggie Melts are a perfect protein-rich pick. Creamy chickpeas, colorful vegetables, and gooey melted cheese on toasted bread. A hit with adults too.

Ingredients

  • 1 1/2 cups boiled chickpeas
  • 1 medium carrot
  • 1/4 cup parboiled green peas
  • 1/4 cup chopped capsicum
  • 1 small onion
  • 1/2" piece of ginger
  • 1-2 green chillies (optional)
  • 1 tsp mixed herbs seasoning
  • 2 tbsp tomato ketchup
  • 1 tbsp mayonnaise
  • 2 tbsp butter
  • 4 slices of bread
  • 1/2 cup grated mozzarella cheese

Instructions

  • In a food processor, add the vegetables along with onions, green chillies, and ginger. Chop them coarsely. Remove and keep aside.
  • Take boiled chickpeas in a mixing bowl and mash them coarsely.
  • Add in the chopped vegetables. Mix.
  • Add the tomato ketchup, mayonnaise, and mixed herbs seasoning. Mix well.
  • In the meantime, preheat the air fryer at 180°C.
  • Butter the bread slices. Generously spread the mixture you prepared earlier. Top with grated cheese.
  • Cook in the air fryer at 180°C for 6-8 minutes until the cheese melts and browns in spots. The Chickpea Cheesy Veggies Melts are ready to enjoy.

Notes

  • I have used whole wheat bread to make this healthier. Feel free to experiment with different breads and veggies.
