Chickpea Cheesy Veggie Melts

Looking for a fun and delicious way to get kids to enjoy more veggies? The Chickpea Cheesy Veggie Melts are a perfect protein-rich pick. Creamy chickpeas, colorful vegetables, and gooey melted cheese on toasted bread. A hit with adults too.

Ingredients
- 1 1/2 cups boiled chickpeas
- 1 medium carrot
- 1/4 cup parboiled green peas
- 1/4 cup chopped capsicum
- 1 small onion
- 1/2" piece of ginger
- 1-2 green chillies (optional)
- 1 tsp mixed herbs seasoning
- 2 tbsp tomato ketchup
- 1 tbsp mayonnaise
- 2 tbsp butter
- 4 slices of bread
- 1/2 cup grated mozzarella cheese
Instructions
- In a food processor, add the vegetables along with onions, green chillies, and ginger. Chop them coarsely. Remove and keep aside.
- Take boiled chickpeas in a mixing bowl and mash them coarsely.
- Add in the chopped vegetables. Mix.
- Add the tomato ketchup, mayonnaise, and mixed herbs seasoning. Mix well.
- In the meantime, preheat the air fryer at 180°C.
- Butter the bread slices. Generously spread the mixture you prepared earlier. Top with grated cheese.
- Cook in the air fryer at 180°C for 6-8 minutes until the cheese melts and browns in spots. The Chickpea Cheesy Veggies Melts are ready to enjoy.
Notes
- I have used whole wheat bread to make this healthier. Feel free to experiment with different breads and veggies.

I love grilled cheese and bread of any sort but this recipes grabs my attention for the addition of chickpeas, that is again high in fiber and will added vegan protein to this dish and make it nutritious too.
