Vegan Green Peas & Mint Soup

Fresh and light. The Vegan Green Pea & Mint Soup is a refreshing one that is full of fiber. Try out my version of the classic English soup that can be served either hot or chilled.

Ingredients
- 2 cups green peas
 - 1 tbsp olive oil
 - 1 medium onion chopped
 - 1 tbsp chopped garlic
 - 1 bay leaf
 - 1" piece of cinnamon
 - 2 cups vegetable stock
 - 3 tbsp chopped mint leaves
 - 1 tbsp chopped green chillies
 - 1 tsp vinegar
 - Salt to taste
 
Instructions
- To begin, heat oil in a saucepan. Add in the bay leaf and the cinnamon stick.
 - The Vegan Green Pea & Mint Soup is ready to serve. Garnish it with a sprig of mint and serve with toasted bread.
 
Notes
- If you don’t have vegetable stock readily available, dissolve two cubes of Maggi Super Seasoning in 2 cups of water.
