Greek Chickpea Salad

Protein-packed chickpeas, creamy Greek yogurt, crisp veggies, and fresh herbs come together in a delightful Greek Chickpea Salad. A healthy and satisfying salad for a complete Mediterranean experience. Try out this delicious recipe that is ready in minutes.
Ingredients
- 1 1/2 cups boiled chickpeas
- 1/2 cup sliced onions
- 1/2 cup diced capsicum
- 1/2 cup diced cucumbers
- 1/2 cup cherry tomatoes halved
- 1/2 cup sliced spring onions
- 1/2 tsp salt or to taste
- 1/4 tsp crushed black pepper
- 3 tbsp chopped coriander leaves
- 3 tbsp chopped mint leaves
For the dressing
- 1/2 cup Greek yogurt
- 2 tbsp mayonnaise
- 3 cloves garlic finely chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 3 tbsp chopped dill
- 3 tbsp chopped parsley
Instructions
- To begin, prepare the dressing. In a bowl, mix together Greek yogurt, mayonnaise, garlic, lemon juice, olive oil, dill, and parsley. Mix well and keep aside.
- In a larger bowl, add boiled chickpeas, sliced onions, diced capsicum and cucumbers, halved cherry tomatoes, and sliced spring onions. Mix well.
- Add the dressing you prepared earlier along with salt and crushed black pepper. Toss until well coated. Check the salt and add more if required.
- Refrigerate for at least an hour so that the chickpeas and vegetables soak in the flavors. The Greek Chickpea Salad is ready to enjoy.
Notes
- If Greek yogurt is not available, you can use hung curd instead.
