Cumin Coriander Rice

A quick and easy rice recipe with subtle flavors. Elevate the ever-popular jeera rice with an age-old family favorite – the Cumin Coriander Rice.

Ingredients

  • 2 cups pre-boiled rice
  • 1 tbsp oil
  • 1 bay leaf
  • 1 tbsp cumin seeds (jeera)
  • 1 tbsp finely chopped garlic
  • 1-2 green chillies finely chopped
  • 1/4 tsp red chilli flakes
  • 1 tbsp vinegar
  • 1 tbsp lemon juice
  • 1 cup chopped coriander leaves
  • Salt to taste

Instructions

  • To begin, heat 1 tbsp oil in a pan. Add in a bay leaf and the cumin seeds and allow them to crackle.
  • Next, add in the chopped garlic along with the chopped green chillies. Cook for a minute. Do not brown the garlic.
  • Add in the boiled rice that is seasoned with salt. Mix gently. Cook for a few minutes until the rice heats up.
  • Turn off the heat. Add in the chopped coriander leaves and the lemon juice. Mix well. Check the salt and add more if required.
  • Add in the red chilli flakes and vinegar. Mix.
  • Turn off the heat. Add in the chopped coriander leaves and the lemon juice. Mix well. Check the salt and add more if required.
  • The Cumin Coriander Rice is ready to serve. Garnish with chopped coriander leaves and lemon wedges.

Notes

  • This recipe works perfectly with leftover boiled rice too.
