Eggless Savory Vermicelli Waffles

Start your day right with a delicious and filling breakfast. Try out the Eggless Savory Vermicelli Waffles that are loaded with veggies and flavored with Indian spices. Works great for tiffin boxes too.
Ingredients
- 1/2 cup roasted vermicelli
- 1/2 cup rava or semolina
- 1/2 cup hot water
- 1/2 cup curd
- 1 medium onion finely chopped
- 1 tbsp ginger garlic paste
- 1-2 chopped green chillies
- 1" piece of ginger finely chopped
- 1/4 cup finely chopped carrots
- 1/4 cup diced green capsicum
- 1/4 cup parboiled green peas
- 1/4 cup sweet corn kernels
- 1 tsp salt or to taste
- 1/2 tsp Kashmiri red chilli powder
- 1 tbsp cumin powder (jeera)
- 1 tbsp coriander powder (dhania)
- 1 tbsp amchoor (dry mango) powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
Instructions
- In another bowl, mix together the rava, curd, and water. Leave aside for at least 10 minutes to allow the rava to soak in the liquids.
- In the meantime, pre-heat the waffle iron. I am using a stove top one but you can use the electric waffle maker as well.
Notes
- You can use any vegetables of your choice for the waffles.

Ohhhh… the veggies are inside the waffle… wow! when I read the ingredients, I thot the veggies would be in those little pockets. what an interesting recipe Madhu ma’am. It’s a very good idea for kids who r fussy about eating vegetables. Waffles appeal to them a lot.

Waffles I had tasted many but that all are from market and I never tried that at home. What I found interesting about this recipe is being eggless and I stay in a locality where 90% of the people are veg persons and so serving them quality veg dishes sometimes turn difficult for me. So I find the eggless concept very attractive in this recipe and I should now give it a try as being a new mom I need to learn more recipes to make at home to ensure by baby’s tastebuds are satisfied and its healthy for his tummy too. hmm…such a unique idea! I’m still into pancakes though and waffle is next in line. I’ll surely try to make this kind of waffle and see how it is compared to the usual western waffles I know.

As I read the ingredients, I thought that the vegetables would be contained in separate pockets but was taken aback to find that they were really embedded into the waffle itself. This is an exciting recipe, Madhu ma’am, and it can greatly assist parents of children who have a fussy eater and dislike eating vegetables. Among youngsters, waffles are a well-liked food option, and including vegetables in waffles is a clever way to enhance their nutritional value.
