The traditional English breakfast or a fry-up is a meal in itself. This is my version of the English breakfast with baked beans, sausages, tomatoes, mushrooms, and sunny-side-up eggs.
Ingredients
Baked Beans
- 100 gms soya beans
- 1 medium onion finely chopped
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 cup tomato puree
- 1 tbsp tomato sauce
- 1 tsp Worcestershire sauce
- 1/2 tsp chilli flakes
- 1 tbsp vinegar
- 1 tbsp oil
- Salt to taste
Sausages
- 2 Sausages
- 1 tsp oil
Grilled Tomatoes
- 1 large tomato
- Salt to taste
- Pepper to taste
Grilled Mushrooms
- 6 buttons mushrooms
- 1 tsp butter
- 1 tsp vinegar
Eggs
- 2 eggs
- 1 tsp oil
Instructions
Baked Beans
- To prepare the baked beans, soak the beans overnight. Add in 1 tsp of salt and boil until they are cooked. You can also pressure cook them for four whistles.
- Add in the Worcestershire sauce and the vinegar and mix well. Add in the chilli flakes. Mix well.
- Now add in the beans and mix until they are well coated. You can add a bit of water if required. Cook for a couple of minutes.
Sausages and Grilled Tomatoes
- Heat 1 tsp of oil in a pan. Keeping the flame on medium to low, add in the sausages and the tomatoes.
- Sprinkle some salt and pepper on the tomatoes. Grill the tomatoes until done and until the sausages are colored. Remove them from the pan and keep aside.
Grilled Mushrooms
- Add in a tsp of vinegar to deglaze the pan. Check the salt and add more if needed. Remove and keep aside.
Eggs
- Fry two eggs sunny side up in a tsp of oil.
Notes
- Traditionally, Lima beans or navy beans are used for baked beans. I have used the readily available soya beans instead.
