Kobichi Bhaji (Cabbage Stir Fry)

Stir-fried cabbage with green peas. Kobichi Bhaji is a popular vegetarian stir fry dish from the Indian state of Maharashtra. Simple, light, and easy to make. Try out this recipe that is ready in minutes.

Ingredients

  • 1 cabbage (approx. 300 gms)
  • 1/2 cup green peas
  • 2 tbsp oil
  • 1 tsp mustard seeds (sarson)
  • 1 tsp cumin seeds (jeera)
  • 1/4 tsp hing (asafoetida)
  • 2 chopped green chillies
  • 1 sprig curry leaves
  • 1 tsp salt
  • 1 tbsp finely chopped coriander stems
  • 1/2 tsp turmeric powder
  • 1/2 tsp sugar
  • 1 tbsp lemon juice
  • 1 tbsp chopped green coriander leaves

Instructions

  • To begin, chop the cabbage and keep it aside.
  • Heat oil in a pan. Add in the mustard seeds and allow them to crackle.
  • Next add cumin seeds, asafoetida, chopped green chillies, and curry leaves. Mix well.
  • Add in the peas and chopped coriander stems. Saute for a minute or two.
  • Add the cabbage, salt, sugar, and turmeric powder. Mix well. Cover with a lid and cook until done, mixing occasionally.
  • Turn off the heat. Finish with lemon juice and chopped coriander leaves. Mix well.
  • The Kobichi Bhaji is ready to serve. Serve hot with chapatis.

Notes

  • You can use frozen peas for the recipe. Be sure to thaw them first.
