Kobichi Bhaji (Cabbage Stir Fry)

Stir-fried cabbage with green peas. Kobichi Bhaji is a popular vegetarian stir fry dish from the Indian state of Maharashtra. Simple, light, and easy to make. Try out this recipe that is ready in minutes.
Ingredients
- 1 cabbage (approx. 300 gms)
- 1/2 cup green peas
- 2 tbsp oil
- 1 tsp mustard seeds (sarson)
- 1 tsp cumin seeds (jeera)
- 1/4 tsp hing (asafoetida)
- 2 chopped green chillies
- 1 sprig curry leaves
- 1 tsp salt
- 1 tbsp finely chopped coriander stems
- 1/2 tsp turmeric powder
- 1/2 tsp sugar
- 1 tbsp lemon juice
- 1 tbsp chopped green coriander leaves
Instructions
- To begin, chop the cabbage and keep it aside.
- Heat oil in a pan. Add in the mustard seeds and allow them to crackle.
- Next add cumin seeds, asafoetida, chopped green chillies, and curry leaves. Mix well.
- Add in the peas and chopped coriander stems. Saute for a minute or two.
- Add the cabbage, salt, sugar, and turmeric powder. Mix well. Cover with a lid and cook until done, mixing occasionally.
- Turn off the heat. Finish with lemon juice and chopped coriander leaves. Mix well.
- The Kobichi Bhaji is ready to serve. Serve hot with chapatis.
Notes
- You can use frozen peas for the recipe. Be sure to thaw them first.
